Exclude LtsUtilsGuiDds from release scope (requires DDS headers)

- LtsUtilsGuiDds depends on DDS/Core headers not in release scope
- Only needed by LtsMultiMonitor which is outside release scope
- Prevents compilation errors during DEB package build
